Recipe Monday - Beef Stroganoff

This is a great, traditional stroganoff recipe, that isn't too hard to follow. Ready in 30 minutes.




Ingredients

1 1/2pounds beef sirloin steak

1/2 inch thick8ounces fresh mushrooms, sliced (2 1/2 cups)

2 medium onions, thinly sliced

1garlic clove, finely chopped

1/4 cup butter or margarine

1 1/2cups beef flavored broth

1/2teaspoon salt

1 teaspoon Worcestershire sauce

1/4cup all-purpose flour

1 1/2 cups sour cream

3 cups hot cooked egg noodles


Directions

1 Cut beef across grain into about 1 1/2x1/2-inch strips.


2 Cook mushrooms, onions and garlic in butter in 10-inch skillet over medium heat, stirring occasionally, until onions are tender; remove from skillet.


3 Cook beef in same skillet until brown. Stir in 1 cup of the broth, the salt and Worcestershire sauce. Heat to boiling; reduce heat. Cover and simmer 15 minutes.


4 Stir remaining 1/2 cup broth into flour; stir into beef mixture. Add onion mixture; heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in sour cream; heat until hot (do not boil). Serve over noodles.

Recipe Monday - Gorgonzola Mushroom Steak

If you're looking for something a little different on your steak, this gorgonzola mushroom sauce is a great alternative to regular seasonings. Next time I make it, though, I will cut down on the recommended gorgonzola amount. The cheese is so strong that using the full amount can be a little overpowering!





Mushroom Gorgonzola Sauce:
1/2 c butter
1/2 pound mushrooms, sliced
3-4 green onions, chopped
2 cloves garlic
4 ounces gorgonzola cheese
1 T Worcestershire sauce

In a medium skillet, melt the butter and then add the mushrooms and green onions. Cook until the mushrooms are soft, and then add the gorgonzola cheese and Worcestershire sauce. Serve over the beef.

In terms of the steak itself, I seasoned mine with rosemary, basil, salt and pepper, then broiled it in the oven for a few minutes on each side before serving with the sauce.

Recipe Monday - Mushroom Mahi Mahi



2 tablespoons olive oil
3 small onions, chopped
4 cloves garlic, minced
5 button mushrooms, sliced
1 1/2 pounds mahi mahi
salt and pepper to taste
1/4 cup white cooking wine
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
2 tablespoons water



In a large skillet, heat olive oil and cook onions, mushrooms and garlic over medium heat until onions are transparent.

Cut the mahi mahi into 3 inch long filets. Place the Mahi Mahi fillets over the onions, mushrooms and garlic.

Salt and Pepper the first side of the filets to taste.

Add white cooking wine and lemon juice. Cover and cook 4 to 5 minutes.

Turn the filets over and salt and pepper the second side to taste. Cook 4 to 5 minutes or until fish flakes easily. Remove only the fish to a heated plate and keep warm until sauce is ready.

In the same skillet with all the onions, mushrooms, garlic and cooking wine, raise heat to medium/high. Bring to a boil.

Dissolve cornstarch in the 2 tablespoons of water; stir into skillet. (I didn't do this part...the sauce thickened for me without it.)

Stir the sauce continuously until sauce thickens to desired consistency. Pour sauce over mahi mahi filets.

Recipe Monday - Salisbury Steak

Delicious salisbury steaks in less than 30 minutes!




1 1/4 lbs ground beef
1 tablespoon Worcestershire sauce
1 small onion, diced
1 tablespoon steak seasoning (I use Montreal Steak spice)
1 cup sliced mushrooms
2 tablespoons butter
2 tablespoons flour
2 cups beef stock
salt and pepper



1) Gently combine ground beef, worchestershire sauce, steak spice and onion - be careful not to overwork the meat mixture.


2) Shape the meat into oval patties


3) At medium to high heat, fry the meat patties approximately 6 mins on each side - turn only once.


4) Remove the cooked patties to a platter and cover to keep them warm.


5) Add butter to the same pan and melt.


6) Add the mushrooms, salt and pepper to the pan, saute until golden brown


7) Sprinkly the flour over the mushrooms and cook for 1-2 mins until flour has absorbed the butter 


8) Whisk in the beef stock and cook until thickened. Check for seasoning.


9) Serve gravy over the meat patties.

Recipe Monday - Mushroom Salmon


I know this looks like we eat a lot of salmon, but really, I just love the recipes!



1 1/2 lbs fresh salmon
2 tablespoons butter
2 cups sliced fresh mushrooms
2 green onions, chopped
2 tablespoons flour
2 teaspoons chopped fresh parsley
1/2 teaspoon salt
1/2 cup milk
1/4 cup dry white wine (or 2 T water with 2 T fresh lemon juice)

Cut salmon into 4 equal portions and put in a lightly oiled baking dish.
Heat butter in skillet and add mushrooms and green onions
Saute over medium heat until mushrooms are tender then stir in flour, parsley and salt
Add milk and bring to a boil
Stir until thick, then add wine or water and lemon juice
Boil one minute, then pour sauce over salmon
 Bake at 350° for 20 to 25 minutes or until fish flakes easily.


This was a great alternative to our typical salmon recipes.
