Recipe - Pillsbury Meatpie
Sometimes I don't fail in the kitchen. Those times usually involve Pillsbury.
Heat oven to 400°F. Grease 9-inch pie pan with shortening. Separate dough into 10 biscuits. Press 6 biscuits in bottom and up side of pie pan to form crust. Cut remaining 4 biscuits into quarters; set aside.
In 10-inch skillet, cook ground beef and onion over medium heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in ketchup, mustard, salt and pepper. Cook uncovered until bubbly. Spoon into biscuit-lined pan.
Arrange cheese slices on top of beef mixture. Place biscuit quarters, point side down, around edge of hot beef mixture.

Recipe Monday - Cheesy Chicken Pasta for Dummies
I went on Pinterest and, like, I totally don't have time to be baking a casserole after I already made the whole dish. So, here's a mac and cheese with chicken that I just did pot-style, and everyone seemed to love it.
Chicken breasts - diced
Bowtie pasta
Summer squash - sliced
Onion
Garlic
Salt
Pepper
Cheddar cheese
Parmesan cheese
Mozzarella cheese
Milk
Chicken broth
Dice all your chicken and vegetables, then put sautee the chicken in some olive oil until it's tan around the edges.
Boil your pasta water, and start making the pasta per box directions.
Put squash, onion and garlic in with the chicken until they're all soft.
Add some chicken broth and cook until it boils, then add the milk.
Drain pasta and add it to the mess.
Throw in all your cheeses until the liquid turns to a satisfactory this-is-the-consistency-of-mac-and-cheese consistency.
Serve it up.

Recipe Monday - Lemon Feta Chicken
This was a great recipe. The original used drumsticks, but we prefer white meat around here, so I used breasts and it was fantastic.
Ingredients:
8 skinless chicken drumsticks, (about 30 oz total)
kosher salt and fresh ground pepper
2 tsp garlic powder
1 tbsp dried oregano
juice of 1 lemon
1/3 cup feta cheese, grated
Directions:
Preheat oven to 375°. Season chicken with salt, pepper, garlic powder, oregano, and lemon juice.
Place in a roasting pan and bake for about 40 to 45 minutes, or until chicken is no longer pink in the center near the bone. When chicken is cooked through, remove from the oven and sprinkle with feta.
Broil on low for about 2-3 minutes, until cheese is golden brown (careful not to burn).

Recipe Monday - Sausage, Rice and Veggie Dish
So, I don't have an amazing name for this because I made it up myself, but it's basically delicious, throw-everything-together fare.
It involves:
Sausage
Onions
Peppers
Diced Tomatoes
Black Beans
Cheddar Cheese
Yellow Rice
Salt
Pepper
Chicken or Beef Broth
Olive Oil
Heat sausage and oil in pan over medium high heat until browned on all sides, about ten minutes. At the same time, start making your yellow rice.
Cut up your pepper and onion and throw them into the pan with the sausage.
Open the diced tomatoes and beans, stir your sausage mix, and throw them in, too.
Toss in enough broth so that you're not burning your veggies to the pan and turn the heat down to low medium.
Throw in the finished rice and stir it all up.
Cook until the rice absorbs the broth.
Cover with cheese.
DONE.

Recipe Monday - Cheesy Tomato Slices

I am collecting these for an epic slice of life tomorrow! We can really make a statement if we all pitch in!
Anyway, while I'm doing that, here's one of the best ever recipes I've discovered this summer.
Okay, I know it looks like a pinterest fail, but bear with me. These are the most delicious things you will ever put in your mouth, I swear.
1/2 cup grated Parmesan and Romano cheese blend
1/2 cup shredded part-skim mozzarella cheese
1/2 cup ricotta cheese
1/2 cup Mayonnaise
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon minced garlic
4 large tomatoes
Directions
In a small bowl, combine the first seven ingredients.
Cut each tomato into five slices.
Spread each with 1 tablespoon cheese mixture.
Place on an ungreased baking sheet.
Broil 3 in. from the heat for 3-5 minutes or until cheese mixture is golden brown and tomatoes are heated through.
Yield: 20 appetizers.
TRY THIS YOU WILL NOT BE SORRY.

Recipe Monday - Homemade Hamburger Helper
I'd made a few hamburger helpers when I just couldn't get myself to do anything more, and I noticed I was making it super hard on myself anyway by adding chopped veggies and all other kinds of things to try to make it more healthy. So, this time, I decided to nip it in the bud, and just make my own "helper" too. It came out great! The girls asked for seconds.
1 lb ground beef
1 cup hot water
2 cups milk
1 1/2 cups elbow macaroni
1 cup cheddar cheese
1 tablespoon cornstarch
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic
1 teaspoon salt
teaspoon sugar
Directions:
1 Brown ground beef in a large skillet. Drain.
2 Add hot water, milk, pasta and all spices.
3 Bring to a boil, cover, reduce heat and simmer 12 minutes or until pasta is tender.
4 In the last few minutes of cook time, add cheese, stir and re-cover.
5 When pasta is tender and cheese is melted, remove heat and uncover.
6 Let stand about 5 minutes. Sauce will thicken as it stands.
7 Top with additional cheese if you like.
I added sauteed onions, summer squash and bell peppers to this and it was delicious. You can throw in any vegetables you like!
