Recipe Monday - Sauteed Zucchini and Tomatoes

This was great. A perfect summer side, over rice or alone.





Ingredients:

1 zucchini, cut up
5 fresh plum tomatoes, diced
5 cloves garlic, smashed
2 tbsp extra virgin olive oil
1/2 tsp Herbes de Provence
kosher salt and fresh pepper


Directions:

In a large non-stick skillet, heat olive oil over medium-high heat. Add garlic and sautéuntil golden. Add zucchini, salt and pepper. Cook about 4-5 minutes on each side,add tomatoes and season with additional salt and herbes de provence. Lower heat and simmer about 5-10 minutes. Divide into 4 equal portions when serving.

Recipe Monday - Avocado, Tomato, Mozzarella Salad

This is a great salad for the spring nights ahead. Refreshing and cool, with great seasoning.




Ingredients:
Avocado (two)
Tomatoes (three)
Cucumber (one)
Fresh Mozzarella (1/2 ball)
basil
olive oil
balsamic vinegar
salt
pepper

Mix all of these together and chill for an hour. Boom.

Recipe Monday - Salsa Salad Mix

This was amazing. I used it as a side dish for enchiladas the other week. It's really simple, too.




1 can black beans
1 can corn
2 fresh diced tomatoes
2 avocados
1 small onion
lime juice
garlic
salt
pepper

Cut up anything that needs to be cut. Mix it all together. Refrigerate for an hour.

DONE.

Recipe Monday - Cheesy Tomato Slices

Today I'm coordinating a huge project on Facebook. If you support women's rights in Texas, wear orange, snap a pic of your self, and post it publicly on Facebook with the hashtag #fordarlena

I am collecting these for an epic slice of life tomorrow! We can really make a statement if we all pitch in!

Anyway, while I'm doing that, here's one of the best ever recipes I've discovered this summer.



Okay, I know it looks like a pinterest fail, but bear with me. These are the most delicious things you will ever put in your mouth, I swear.

1/2 cup grated Parmesan and Romano cheese blend
1/2 cup shredded part-skim mozzarella cheese
1/2 cup ricotta cheese
1/2 cup Mayonnaise
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon minced garlic
4 large tomatoes

Directions
In a small bowl, combine the first seven ingredients.
Cut each tomato into five slices.
Spread each with 1 tablespoon cheese mixture.
Place on an ungreased baking sheet.
Broil 3 in. from the heat for 3-5 minutes or until cheese mixture is golden brown and tomatoes are heated through.

Yield: 20 appetizers.
